Homemade Tiramisu

I have come to realize how many Italian entrees and desserts I never had as a kid. Not sure why, but my grandparents or parents never made Tiramisu or even bought it. Sure, we had many other Italian desserts, mostly cookies and cannolis, usually bought at a local Italian bakery. Never really had Tiramisu until I was much older (maybe college)? Surprising, I know.


There are so many different recipes out there for Tiramisu, and different opinions on how it should (and should not) be made. The recipe we are sharing with you in this video is the recipe we enjoy the most. The trick to getting a wonderfully light and fluffy Tiramisu (and ladyfingers for that matter) is to whisk the egg whites, yolks, and heavy cream separately with sugar, and then gently fold the ingredients back together without over mixing. Whisking separately allows the ingredients to fluff up, creating spongy ladyfingers and a delicate, light, and fluffy cream. Whisking the heavy cream chilled will fluff up faster and lighter - some even say chill the mixing bowl. The other trick is choosing a good espresso or dark roast coffee that you like, because you will surely get hints of its flavor in this dessert.


The first time we made Tiramisu with the kids, they loved the Ladyfingers but weren't crazy about the dessert. The second time we made it, they said they absolutely loved it and could not stop eating it. Then we made it a third time (in this video) and the kids enjoyed it, but my wife and I definitely enjoyed it more. When I asked my daughter Anna, she said she liked it better the second time when we used the espresso from Starbucks (the other two times, we made it with a dark roast coffee). I guess she is developing a very sophisticated (and expensive) palette.

Our kids love making Tiramisu. There are many steps, but they are so easy for them to do and it teaches them many different techniques. From separating eggs, to whipping, folding, piping, and layering. And there are plenty of extra ladyfingers to go around, which the kids enjoy eating separately as well.
