Cookies Over Texas Ice Cream Cake

For my son's 9th birthday, my daughter Anna decided to bake him a cookie cake. My son really wanted an ice cream cake, but my daughter wanted to bake a cookie cake. So my wife Liz came up with the idea of making a cookie cake in a spring form pan and then placing softened ice cream over the top, spreading it out, and letting it freeze. Best ice cream cookie cake ever!


Our supermarket (HEB) has a wonderful ice cream product line which they call Creamy Creations. This summer, they came out with a new flavor called Cookies Over Texas. And of course, living in Texas, anytime you can add the word Texas to something, it just makes it that much better. I saw it and bought it for the kids and it is now their new favorite ice cream flavor. Its basically cookies and cream mixed with cookie dough, but OMG delicious! My daughter originally was going to put just plain vanilla ice cream on top of the cookie cake, but I suggested using this instead. Wow, so heavenly!

Video Tutorial (Season 1, Episode 8)

In this video, my daughter takes the lead. She and my wife love to bake, and my daughter has gotten to the point now where she will bake things completely on her own without any assistance. So when she decided to make this new ice cream cookie cake, I asked her if she would record it as an episode and take the lead. Being the actress that she is, she had no problem saying yes!


P.S. Since this was our first video with the kids taking the lead, we decided to include a bunch of bloopers at the end. Don't forget to watch the bloopers (after the final picture slide and theme song).
